  • Cut a bell pepper in half and clean out the seeds inside. 
  • Stuff the pepper with cooked strips of chicken. 
  • Top the chicken with salsa. Add some corn, if desired. 
  • Bake at 350 degrees for about ten minutes, then add white cheddar cheese one top. 
  • Continue baking for another five minutes, until the cheese is nice and melty. 
  • Take out of the oven and top with a slice of avocado and a sprig of cilantro.
